Ingredients

  • 2 1/2 cups fresh chopped mushrooms or 1/2 cup lion's mane mushroom powder
  • 2 broccoli heads chopped
  • 1 medium onion diced
  • 8 medium potatoes chopped
  • 3 tablespoon olive oil (or any other cooking oil)
  • 1 cup boiling water
  • 4 cups water, cold or room temperature
  • 3 cloves minced garlic
  • ½ cup chopped parsley,
  • 2 vegetable stock cubes
  • Sea salt and black pepper: according to taste

Optional Ingredients

  • 1 tablespoon smoked paprika powder
  • 1 tablespoon harissa paste

For Garnishing

  • Lime juice
  • Lemon juice
  • Olive oil drizzle

  • 1 large stock or soup pot
  • Immersion blender or food processor

Instructions

1. Preparing The Soup

Chop potatoes, dice the onion into small pieces, and peel and mince garlic cloves. Sautee the onion, potato, and garlic in olive oil in a soup pot. To prevent the potatoes from sticking to the bottom of the pot, cook over medium heat and frequently toss while following this lion's mane mushroom soup recipe.

Add the remaining key ingredients, including the chopped broccoli, black pepper, and sea salt. If you use organic Lion's mane mushroom powder, mix it with water. Omit the water if using fresh Lion's mane. Then, according to taste, add salt and pepper.

Alternatively, you can use dried Lion's mane mushroom, easily reconstituted in water. Simmer with 1 cup of water for 20 minutes or until tender, covered in a pan. You can strain the mushroom and use the remaining liquid in the soup. Rinse the rehydrated mushrooms, slice, and add immediately to the soup.
