  • 1 tablespoon smoked paprika powder
  • 1 tablespoon harissa paste

For Garnishing

  • Lime juice
  • Lemon juice
  • Olive oil drizzle

  • 1 large stock or soup pot
  • Immersion blender or food processor

1. Preparing The Soup

Chop potatoes, dice the onion into small pieces, and peel and mince garlic cloves. Sautee the onion, potato, and garlic in olive oil in a soup pot. To prevent the potatoes from sticking to the bottom of the pot, cook over medium heat and frequently toss while following this lion's mane mushroom soup recipe.

Add the remaining key ingredients, including the chopped broccoli, black pepper, and sea salt. If you use organic Lion's mane mushroom powder, mix it with water. Omit the water if using fresh Lion's mane. Then, according to taste, add salt and pepper.

Mix until the veggies are semi-soft, then add the water at room temperature. On the side, dissolve the two vegetable stock cubes in hot water. Stir thoroughly before bringing to a boil. Next, add the stock cube mixture with hot water. Use the optional harissa paste and smoked paprika powder for an added kick.

Turn down the heat and simmer for 30 to 40 minutes, stirring now and then.

2. Blending

Pour the hot soup into an immersion blender or food processor. The ideal blender is the immersion one. Let the soup cool down before blending if you do not have an immersion blender.

3. Serving

Once blended, spoon into bowls and top with olive oil, a slice of lime or lemon, and some fresh parsley. Serve and enjoy your soup.

Additional Notes:

If you are using fresh mushrooms for this Lion’s mane mushroom recipe, clean them before cooking. But do remember to wash them as necessary since they are very porous. Alternatively, you can brush the dirt off.

Alternatively, you can use dried Lion's mane mushroom, easily reconstituted in water. Simmer with 1 cup of water for 20 minutes or until tender, covered in a pan. You can strain the mushroom and use the remaining liquid in the soup. Rinse the rehydrated mushrooms, slice, and add immediately to the soup.

You can enhance the taste of lion's mane mushroom in soup with additional ingredients. For example, you can get creative with other broth ingredients like ginger, cloves garlic, cayenne, turmeric, sauces, thyme, cornstarch, flour, sherry, carrots, and even celery.

If you have access to other mushrooms—say, reishi,  shiitake, and oyster mushrooms—you can also include them in your recipes. Moreover, if you are not a vegan or vegetarian and are willing to use animal products, you can always add egg yolk, cream, beef, or chicken to your soups to improve the protein in your dishes.
