  • 2 cups milk (vegan alternative almond milk)
  • 3 large eggs
  • 1 cup packed fresh spinach, chopped finely
  • 1 cup spelt flour
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon salt
  • 3 tablespoons unsalted butter, melted, plus
  • Additional butter for cooking and serving
  • For serving: pure maple syrup or jam (optional)

Instructions

1. Preparing The Batter

In a large bowl, thoroughly whisk the eggs and almond milk together. Toss the spinach, flour, butter, salt, and pepper before adding the organic Lion's mane mushroom powder. Allow resting for 15 minutes at room temperature.

2. Making The Pancakes
