Heat 1 tablespoon of olive oil in a large skillet. Once heated, add the sliced Lion’s mane mushroom and sear for roughly around 2 minutes on each side.

Add 1 tablespoon of lemon juice, salt, and pepper, according to your preference.

Remove from heat and set aside.

3. Preparing the Scampi

On the same large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic cloves and sauté till they are straw-colored (this will take about a minute). Add the white wine and reduce the heat. Simmer until the liquid reduces to half, about 3 minutes.

Now add the vegetable broth and lemon juice. Again, let this simmer for 5 minutes, till it is glossy and thick.

4. Finishing Up

Add the cooked spaghetti to the skillet and toss until thoroughly combined.  You can now add the drained pasta water (see additional notes) to reach the desired consistency. Add in Lion’s mane mushroom and mix it before serving.

Remove from heat and transfer to a plate. Top with parmesan cheese, and parsley. Serve hot and enjoy!

Ingredients

  • 16 oz fresh Lion’s mane mushroom
  • Vegetable cooking oil
  • Sugar
  • Water

For the spice mix:

  • 1 tablespoon cumin powder
  • 1 tablespoon sesame seeds
  • 1 tablespoon chili powder
  • ½ teaspoon salt (or according to taste)
  • ½ teaspoon mushroom seasoning

For the batter:

  • 3 tablespoons water
  • 2 tablespoons flour
  • For the topping:
  • Cumin powder
  • Chili powder
  • Salt

Equipment

  • 1 large pot
  • 2 medium bowls
  • Few skewers (round 8 to 9)
  • 1 large shallow pan

Instructions

1. Preparing the Mushroom

Gently clean the mushroom with a soft brush. Remove any tough stems.

Tear the mushroom into bite-sized pieces.

Over medium heat, bring a large pot of water to a boil. Add ½ teaspoon of sugar into the boiling water.

Add the shredded mushroom and cook for about 3 minutes. When the mushrooms are slightly tender, remove them from heat and drain the water.

Let the mushroom cool down. Once they are cold enough, gently squeeze the water out using your palms. Remove all the water (as much as it is possible). Transfer the dry mushrooms to a medium-sized bowl. Set aside.

2. Preparing the Batter

In another bowl, whisk together flour and water to make a thin paste. Set this aside.

3. Coating the Mushroom

Rub the mushrooms with cumin powder, chili powder, mushroom seasoning, salt, and cumin seeds. Repeat this until all the mushrooms are coated.

Now add the sesame seeds into the batter prepared in step 2. Use your fingers to coat the mushrooms with this batter until everything is well combined.

4. Cooking the Mushrooms

Thread around 4 pieces of mushroom on each skewer. Repeat until all the mushrooms are done.

Optionally, you can rub a little cooking oil onto the skewers before threading the mushrooms.

Heat a large shallow pan (make sure the pan fits all the skewers) over low to medium heat. Coat the bottom of the pan with any vegetable oil. Wait till the oil is heated enough.

Now gently and carefully lower the skewers onto the heated oil and cook the mushrooms.

Occasionally turn the skewers until all the sides are golden brown with a thin crust. Fully cook through the mushroom and maintain a light sizzle over low to medium heat.

5. Spice Mix

Combine a teaspoon of chili powder, cumin powder, and ¼ teaspoon of salt.

6. Finishing Up

Once done, remove the mushrooms from the pan and the skewers using a fork. Place it on a large plate.

Sprinkle the spice mix over the plated mushrooms. You can use chili oil and sediment if you like your mushrooms with extra spiciness!

  • ½ cup whipping cream (optional)
  • 2 cups uncooked pasta of your choice (penne, spaghetti, fettuccini, or angel hair pasta)
  • ½ cup White Wine or cooking sherry or vegetable broth
  • 1-ounce cheese (any hard cheese like Parmesan, Romano, or Asiago will do)
  • 2 tablespoons of chopped parsley or basil
  • ¼ Crushed red pepper flakes or 1 medium Serrano pepper (chopped)
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • ½ teaspoon sea salt
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • 10 ounces cherry tomatoes, sliced into half

Instructions

1. Preparing the Mushroom

Teat lion’s mane mushroom into bite-sized pieces. Melt the butter in a skillet and sauté the mushroom for a few minutes. Once done, remove from heat and set aside in a separate bowl.

2. Preparing the Pasta

Heat a large pasta pot filled with water over medium heat and add salt. Once the water starts to boil, add the pasta and cook according to the package instructions.

Once it is done, drain the pasta. Add some oil olive and mix the pasta. Set this aside.

3. Preparing the Sauce

Heat a non-stick saucepan over low to medium heat and drizzle some olive oil. Once the oil is heated add the sliced tomatoes. Cover, reduce the heat, and cook for 5 minutes.
