1. Prepping  Mushrooms

3. Searing the Steaks

  • ½ pound Lion’s mane mushroom (sliced into shrimp sized pieces)
  • 8 oz linguini or spaghetti
  • 3 tablespoons of olive oil
  • ½ cup of dry white wine
  • ¾ cup vegetable stock 
  • 5 minced garlic cloves
  • Lemon juice
  • Parmesan cheese (or vegan parmesan, nutritional yeast, bread crumb)

Instructions

1. Preparing the Spaghetti

Fill a large pasta pot with water. Add some salt and bring it to a boil. Once the water is boiling, add the pasta and cook according to your preference (al dente or soft), but make sure it is not overdone. Drain the water, drizzle some olive oil and set aside.

2. Preparing the Mushroom

Heat 1 tablespoon of olive oil in a large skillet. Once heated, add the sliced Lion's mane mushroom and sear for roughly 2 minutes on each side.

Add 1 tablespoon of lemon juice, salt, and pepper per your preference.

Remove from heat and set aside.

3. Preparing the Scampi

Heat 2 tablespoons of olive oil over medium heat on the same large skillet. Add the minced garlic cloves and sauté till they are straw-colored (this will take about a minute). 

Add the white wine and reduce the heat. Simmer until the liquid reduces to half, about 3 minutes.

Now add the vegetable broth and lemon juice. Again, let this simmer for 5 minutes till it is glossy and thick.

4. Finishing Up

For the spice mix:

  • 1 tablespoon cumin powder
  • 1 tablespoon sesame seeds
  • 1 tablespoon chili powder

For the batter:

  • 3 tablespoons water
  • 2 tablespoons flour

Instructions

1. Preparing the Mushroom

Gently clean the mushroom with a soft brush. Remove any tough stems.

Tear the mushroom into bite-sized pieces.

Over medium heat, bring a large pot of water to a boil. Add ½ teaspoon of sugar to the boiling water.

Add the shredded mushroom and cook for about 3 minutes. When the mushrooms are slightly tender, remove them from the heat and drain the water.

Let the mushroom cool down. Once cold enough, gently squeeze the water out using your palms. 

Remove all the water (as much as possible). Transfer the dry mushrooms to a medium-sized bowl. Set aside.

2. Preparing the Batter

Whisk together flour and water in another bowl to make a thin paste. Set this aside.

3. Coating the Mushroom

Rub the mushrooms with cumin powder, chili powder, mushroom seasoning, salt, and cumin seeds. Repeat this until all the mushrooms are coated.

Now add the sesame seeds to the batter prepared in step 2. Use your fingers to coat the mushrooms with this batter until everything is well combined.

4. Cooking the Mushrooms

Thread around 4 pieces of mushroom on each skewer. Repeat until all the mushrooms are done.

Optionally, you can rub some cooking oil onto the skewers before threading the mushrooms.

Heat a large shallow pan (make sure the pan fits all the skewers) over low to medium heat. Coat the bottom of the pan with any vegetable oil. Wait till the oil is heated enough.

Now gently and carefully lower the skewers onto the heated oil and cook the mushrooms.

Occasionally turn the skewers until all the sides are golden brown with a thin crust. Thoroughly cook through the mushroom and maintain a light sizzle over low to medium heat.

5. Spice Mix

Combine a teaspoon of chili powder, cumin powder, and ¼ teaspoon salt.

6. Finishing Up

Once done, remove the mushrooms from the pan and the skewers using a fork. Place it on a large plate.

  • 16 oz fresh Lion’s mane mushroom
  • ½ cup whipping cream (optional)
  • 2 cups uncooked pasta of your choice (penne, spaghetti, fettuccini, or angel hair pasta)
